Ingredients

    1 small bunch flat leaved parsley
    4 cups vegetable stock
    100g sorrel, very finely shredded
    (gives it the lemony taste but can be substituted with any green leaf e.g. watercress)
    100g baby spinach, very finely shredded
    200g chard or lettuce leaves, tough stems removed, very finely chopped
    160 ml creme fraiche
    salt and black pepper to taste

Directions

makes 4-6 servings
Tie the bunch of parsley and cut off leaves, saving tied stalks. Put the stalks into a sucepan with stock and bring to boil. Add parsley leaves, sorrel, spinach, lettuce (or chard), give it a stir and reduce heat. partially cover and simmer for 10 mins. Remove parsley stalks and discard. Stir in crem fraaiche and adjust seasoning. can be served with toasted bread (not calculated in calories)
