Ingredients

    1c. white basmati rice
    1/2 c. golden raisins
    1/2 c. chopped celery
    2 Tbsp sliced green onions
    1 small diced Granny Smith apple
    1/4 c. toasted almonds
    1 orange, zested
    1/2 c. canola oil
    2 Tbsp orange juice (use zested orange)
    2 Tbsp lemon juice
    1 tsp salt
    1 tsp curry

Directions

Cook rice according to package instructions without butter or salt. Cool. In a large bowl, combine rice (about 3 cups), raisins, celery, green onion, Granny Smith apple, and almonds. Grate zest from orange and add it to the rice. For dressing, combine all remaining ingredients and mix well. Pour over salad and toss. Can be prepared the day ahead - just cover and refrigerate.
