Ingredients

    6 ounces uncooked whole wheat ziti
    1 Tbsp olive oil
    1/4 tsp Kosher salt
    1/4 tsp pepper
    12 ounces sea scallops
    1 Tbsp garlic, minced
    1 (26 oz) jar prepared marinara sauce
    1 jar artichoke hearts, drained and chopped
    1 Tbsp dried oregano
    1/4 cup light cream cheese
    3/4 cup 2% milk mozzarella cheese or provolone

Directions

Preheat oven to 400F. Cook pasta according to package directions, rinse, and drain. Heat the olive oil in the same pot as the pasta. Add garlic and saute 30 seconds. Add the scallops, salt, and pepper to the pan and cook an additional 2 minutes. Add the prepared marinara, artichokes, cooked pasta, and oregano to scallop mixture, tossing well to combine. Spray a 2.5 quart casserole dish with cooking spray. Spoon half the pasta mixture into the pan. Drop the cream cheese by teaspoonfuls on top of the pasta and sprinkle with 1/2 cup of the mozzarella. Spoon the remaining pasta mixture on top and sprinkle with the remaining 1/4 cup of cheese. Bake 20-25 minutes or until bubbly. Let stand 5 minutes before serving.
