Ingredients

    2 cups brown rice
    2 quarts chicken boullion, divided
    3 slices bacon, diced
    1 T. minced garlic
    3 cups chopped celery
    2 cups chopped onions
    1-1/2 lbs venison sausage
    2 T. worcestershire sauce
    1 T. cumin
    2 T. chili powder
    2 T. coriander
    2 cups fresh or frozen corn
    2 cups tomato sauce
    1 quart whole tomatoes, chopped
    6 cups cooked black beans with liquid (mash 2 of the cups before adding)
    salt & pepper to taste

Directions

In a kettle, bring 1 quart of the broth to a boil. Add the brown rice. Bring back to a boil; stir. Reduce heat and simmer, covered until rice is tender.
In a large kettle, fry the bacon until the fat is rendered. Add garlic, celery and onions. Continue to stir and fry until vegetables are tender.Add sausage and brown. Add remaining ingredients. Bring to a boil and simmer, stirring occasionally for about 10 minutes. Makes 20 cups.
