Introduction

A protein-tastic pilaf that will power you all day! This was one of those "I have no food in the house but want dinner al the same" inventions, but it turned out so well I thought I'd better write it down! Simplicity really is more!

This is great if you have leftover quinoa to use up, as well...you'll want about 3 c. cooked.

This is great if you have leftover quinoa to use up, as well...you'll want about 3 c. cooked.

Ingredients

    1 c. uncooked quinoa, rinsed & drained
    2 c. water
    pinch of salt (optional)

    2 cans (6 oz. ea.) tuna packed in water, drained
    1 can (12 oz.) black beans, rinsed and drained
    a handful of parsley, roughly chopped

Directions

Combine quinoa, water, and salt in saucepan with a lid. Bring to a boil, then reduce flame and simmer, covered, till water is absorbed and quinoa is tender 12-15 mintues). Stir every so often with fork so it doesn't stick. Cool before proceeding.


Combine cooked quinoa with tuna (break apart with a fork), beans, & parsley. Season with salt and pepper to taste.


Great served with fresh greens or garnished with a fresh squeeze of citrus juice!
