Introduction

This quick and easy summer salad is great for a BBQ in the summer. This recipe is good for 2-4 people or double it and serve it at your next Picnic. This quick and easy summer salad is great for a BBQ in the summer. This recipe is good for 2-4 people or double it and serve it at your next Picnic.

Ingredients

    1/ 2 head Iceburg Lettuce
    1 Small Tomatoe
    1 Small Onion
    1/2 small Cucumber (with peel)
    6 tbsp Extra Virgin Olive Oil (or light)
    2 tbsp Balsamic Vinegar
    2 Tbsp Mustard
    Salt and pepper to taste

Directions

1.Start our on a large cutting board, Chop up the lettuce, tomatoe, onion and cucumber(as big or small as you'd like)
2.Mix together and make a well in the center of the vegitables.
3. Start adding your mustard, olive oil, and vinegar.
4. add salt and pepper to taste
4. pull the sides together and mix (you can also mix in a bowl if desired, I like to have fun with it)
