    For the 'kofta'


    Soya granules


    chopped spinach


    chopped mint


    chopped coriander


    turmeric powder

    chilli powder

    garam masala


    breadcrumbs


    1 egg

    For 'gravy'


    onion - blanched


    garlic


    ginger


    tomato paste

    turmeric powder
    chilli powder
    garam masala


    dried sage
    (if you are using fresh sage then use only half of the quantity indicated as its more strong than the dried one)

kofta:


Soak soya granules in hot boiling water for 3 minutes and strain the water. Saute spinach in 1 tbsp oil and allow to cook. Add the strained soya and saute well. Add tomato paste and spices and saute for 5 minutes. Now add mint and coriander and saute for a minute until aroma rises from the herbs. Add salt and allow the mixture to cool. After cooling add 1 beaten egg and breadcrumbs add shape into balls. (if you are vegan, then instead to egg you can add paste made from cornflour and cool water to cement the kofta together and to prevent it from breaking while baking). Now line them on baking tray and bake at 200 degree C for 10-15 minutes or until golden brown on top.


gravy:

Grind the blanched vegetables and saute in 2 tbsp oil along with ginger. Wait until they are cooked and the cooking oil seperates from the vegetable paste. Add the spices and saute for 4 minutes. Add the cream and bring to a boil. Now add the sage and cook for 2 minutes.

Add the kofta to the gravy just before serving.
