Introduction

This was a firm favourite for the School Picnics my daughters went to.Their friends and teachers all loved this and I handed out the recipe ever so often.This is a meal in itself with a light fresh Salad added to it.Substitute Vegetables like Cauliflower,Carrots,French Beans,Ivy Gourd,Bell Peppers(any colour or all colours) and Green Peas for the Shrimp in the Vegetarian version. Ingredients

    250gms.old Basmati Rice
    35-40raw medium Shrimp
    100gms.Shallots(Red Onions)
    Salt to taste
    3tsps.Coriander-Cumin Powder
    2tsps.Garam Masala Powder(Everest/Shaan/MDH Brand)
    2tsps.Cumin Seeds
    2tsps.Asafoetida(Hing)Powder
    3tbsps.Sunflower Oil
    MASALA PASTE
    0.5 bunch fresh Coriander Leaves(Cilantro)
    10sprigs of fresh Mint
    7-10 medium hot Green Chillies
    2.5tbsps.Ginger-Garlic Paste
    2 Lemons for juice

    GARDEN SALAD
    2Carrots(3"-4" long)
    2 Oriental Radishes(4" long)
    2 White Cucumbers(3"-4" long)
    2 medium firm ripe Tomatoes
    2 medium Shallots(Red Onions)
    0.5bunch of fresh Coriander(Cilantro)Leaves
    5-6sprigs of fresh Mint
    1cup fresh plain Yoghurt
    Salt to taste
    Dash of Black Pepper

Directions

PREPARATION
Pick and wash the Rice.Drain to remove all the Water from it.Measure Water twice the amount of Rice in a pan and set aside.
Slice the Shallots finely lengthwise.Grind together the Ginger-Garlic, hot Green Chillies,Mint Leaves and half the Coriander Leaves to a fine paste with the Lemon Juice for the Masala Paste .Chop remaining fresh Mint and Coriander Leaves fine.
Shell, devein and wash the Shrimp. Marinate the Shrimp in the ground Masala Paste with a dash of Salt for 15-20 minutes.

METHOD
Boil the measured Water for the Rice and set aside.
Heat Oil in a wok.Add the Cumin seeds and Asafoetida Powder.When these sputter lower flame and add the finely sliced Shallots.Saute till golden and crisp.Add the drained Rice and fry till browned. Sprinkle in the Coriander-Cumin Powder and saute for 1 minute more.Add marinated Shrimp and fry for 2-3 minutes. Pour in the hot measured Water and boil on high heat till two thirds liquid is absorbed.Lower flame and stir in the Garam Masala,finely chopped Coriander Leaves and Salt to taste.Cover and simmer till fully cooked.Serve hot with fresh Garden Salad.

GARDEN SALAD
Slice the Cucumbers,Carrots,White Radishes, Tomatoes and Shallots fine lengthwise.Mix in Salt to taste,a dash of Black Pepper Powder , finely chopped fresh Mint,Sugar,finely chopped Coriander Leaves and plain Yoghurt.Serve with the Shrimp Fried Rice.
