Ingredients

    1/2 cup diced onion (1 medium onion)
    1/2 cup diced bell pepper (1 medium pepper)
    6 oz. Kraft 2% Mexican shredded cheese
    20 oz. Old El Paso Enchilada Sauce
    1 lb. Chicken
    9 Mission Yellow Corn Tortillas

Directions

Sautee onion and pepper
Brown/chop chicken with onions and peppers until done
Add 1/2 of enchilada sauce to chicken mixture
Simmer on medium low heat for 5 mins.

Roll chicken and cheese into enchilada shells. You have enough chicken to make 9 enchiladas. Use 1/2 of the cheese inside the enchiladas.
Place enchiladas in a baking dish.
Pour remainder of sauce over enchiladas.
Top with remainder of cheese.
Bake at 375 for 20 mins.
