Ingredients

    1/2 cup yellow egg substitute
    2 T chopped scallions
    1/3 cup shredded red cabbage
    Whole Wheat flour tortilla
    1t low fat mayo-Hellmann's
    1 large mushroom chopped, cooked
    1 tablespoon soy cheese
    cooking spray

Directions

Spray non-stick pan with cooking spray.
heat pan on medium heat, pour egg into pan. Let the egg cook until it sets. Spread tortilla with mayonnaise. Slide egg onto tortilla. spread cabbage and green onion, mushroom, and cheese over egg. Roll tortilla up and eat.
