Ingredients

    8 oz medium pasta shells or other medium pasta
    1 lb ground turkey
    1 tsp salt
    1 onion, chopped
    2 red bell peppers, cut into 1" pieces
    1 green bell pepper, cut into 1" pieces (I'm using yellow!)
    2 garlic cloves, minced
    1/2 tsp fennel seeds (I left this out)
    1/8 tsp pepper
    1 tbsp olive oil
    1 cup chicken broth
    1/4 cup chopped flat-leaf parsley

Directions

1. Cook pasta according to package directions.

2. Meanwhile, in 10" nonstick skillet, cook turkey with 1/2 teaspoon of the salt over medium heat, breaking up pieces of turkey, 4 to 5 minutes. Remove from pan. Cook onion, peppers, garlic, fennel seeds, remaining salt, and pepper in oil over medium heat until golden, 5 minutes. Add chicken broth; bring to a boil and cook, covered, 10 minutes, until tender. Stir in pasta and turkey; cook until heated through, about 1 minute. Top with parsley.

Makes 4 servings.
