Introduction

Ingredients

    1 heaping cup of frozen (fresh berries will fall apart) Marion Berries

    Dry list -
    1 cup Oat Bran
    1 cup Flour
    1/2 cup sugar
    1 cup (heaping) frozen Marion Berries
    1 tbl baking powder
    1/2 tsp salt

    Liquids -
    3/4 cup nonfat milk
    1 tablespoon Raspberry extract
    1 egg
    1/4 cup canola or grape-seed oil

    Filling -
    1 brick softened, fat-free cream cheese
    1/2 cup sugar

Directions

Preheat oven to 400
Soften cream cheese and blend with sugar and set aside. Blend dry ingredients together, blend liquid ingredients together and add to the dry, batter will be lumpy. Carefully stir in frozen berries.

Place paper cups in muffin tin and put one small spoon of mixture into each muffin cup. Divide cream cheese mixture evenly into cups. Divide remaining muffin mixture evenly making sure you put even amounts of berries into each cup. Bake for 20 to 25 minutes (the toothpick test doesn't work because of the cream cheese) and allow to cool. Serve with a skinny grande latte (make mine a triple shot please) and enjoy.
