Ingredients

    2 lbs extra lean hamburger ( ground turkey or chicken would work well too)
    1 packet onion soup & dip dry mix or onion mushroom mix.
    1/2 C bread crumbs I like the seasoned ones
    1 egg
    3/4 C milk ( calculated with 2% milk)
    1/2 C ketchup
    4 large baking potatoes cut into wedges-microwaved 5-6 min before adding to packets or can get frozen ones.
    3 C baby carrots or slivered whole carrot

    make your own meatloaf recipe and follow the rest of instructions.

Directions

mix meat with soup mix,, milk, bread crumbs and egg. form into8 mini loaves 4"x2". Place each loaf on an 18x10" sheet of tin foil, spray with cooking spray. top with 1 TB ketchup. place about half cup of pofatoes and carrots around each loaf and fold tin foil into tight packets to seal edges. Place packets on grill, cover and cook medium heat 25 to 30 minutes.or until veggies and meat is done. rotate packets after 15 min. To serve slit an X into top of foil and carefully separate so steam can escape. These can be made up to 24 hrs ahead of time. Serve with a nice tossed salad or coleslaw and rolls for good meal. although packets are a full meal in itself.
