Ingredients

RICE:
1 tsp. canola oil
1 1/2 c. uncooked long grain rice
1/2 tsp. ground turmeric
1/2 tsp ground cumin
3 1/3 c. water
1/2 tsp salt
ADD TO RICE:
1 can corn
1/2 c. finely chopped and peeled cucumber
1/2 c. finely chopped red pepper
1/2 c. finely chopped green or red onion
1/4+ c. chopped cilantro
1 T. minced seeded jalepeno
1 can black beans, rinsed and drained
DRESSING:
1 tsp. cumin
6+ T. fresh lime juice
3 T. canola oil
2 T. water
1/2 tsp. kosher salt
1 garlic clove, minced
Directions
Heat oil in a large skillet over med. heat.
1/2 t. cumin. Add 3 1/3 cups water and 1/2 t. salt; bring to a boil.
Cover, reduce heat, and simmer 25 minutes or until liquid is absorbed.
Remove from heat, uncover and cool.
Add corn and next six ingredients.
Heat 1 teaspoon cumin in a small nonstick skillet over low heat for 30 seconds or until fragrant. Remove from heat and immedietly take out of the pan so it won't burn.
Stir in 6 T. lime juice and the next 4 ingredients. Stir into rice mixtrue.
Add grilled chicken or blue corn chips for extra flavor/texture or a heartier meal.
