Number of Servings: 8

Ingredients

    10 oz. fresh baby spinach, rinsed and drained
    1 lb fresh strawberries, hulled and sliced

    1/4 cup sugar (or less if sugar substitute)
    juice of 1 large fresh lemon
    6 T. veg. oil

Directions

Prepare spinach and place in salad bowl, slice strawberries on top of spinach and leave strawberries atop spinach until ready to serve (at least 1 hour so juice of berries drains into spinach). Cover with plastic wrap and refrigerate.

Place sugar in mixing bowl, whisk in lemon juice until the sugar is dissolved. Add veg. oil 1 T. at a time, shisking after each addition until dressing is creamy and thickened. Cover and refrigerate until ready to serve. Whisk (or shake) dressing well before dressing slad.

Toss strawberries into spinch with the dressing at serving time.
