Introduction

Great for feeding a lot of folks can have it for dinner with cornbread or as a side. Great for feeding a lot of folks can have it for dinner with cornbread or as a side.

Ingredients

    2 lb bag of black beans
    2 onions
    1 lb of bacon
    2 cans hot rotel

Directions

For the best beans it is a good idea to rinse them and let them soak for a few hours, say 5. Then put them in your crock pot and fill it with water until it is about a half inch over the beans. Coarse chop 2 onions, dump 2 cans of rotel and chop up your bacon. Put it all on low and let it go. Again, the longer it cooks the better it gets. I would say to cook it for a minimum of 6 hours, but I like to let it go for 12. It is so easy in the crock pot. Just turn it on and forget about it until the aroma fills the house! Yum!
