Ingredients

1 and 1/2 tablespoons (45ml) cornflour/cornstarch
3 tablespoons fresh orange juice
3 tablespoons sherry (or substitute some other fortified wine)
5 tablespoons water
3 tablespoons wine vinegar
3 tablespoons soy sauce
3 tablespoons tomato puree
1 inch piece of grated root ginger
1 garlic clove, grated
2 tablespoons dark soft brown sugar
Directions
Blend the cornflour (cornstarch) with the orange juice until smooth. Add all the remaining ingredients and stir well over a low heat until thickened and syrupy.
