Ingredients

3 oz. cooked chicken or turkey (can substitue with 1 hard boiled egg or 1/2 can tuna or salmon)
2 tbsp. low fat mayonnaise
1 tbsp. barbeque sauce, pesto or dijon mustard (you can also use paprika or curry powder if you want a different flavor)
1 tbsp. red onion, chopped (you can substitute shallots, green onions or chives)
1 tbsp. red pepper, chopped (or any color pepper will do)
1 tbsp. celery, chopped
2 slices whole grain bread
2 tsp. butter (optional)
1 lettuce leaf
1 slice tomato
1 small apple
Directions
Mix cooked or canned meat with mayonnaise, onion, peppers, celery and seasonings. Butter bread and top with salad mixture, lettuce and tomato. Serve with apple.
