Ingredients

Kellogg's Raisin Bran Extra, 1 cup
Milk, 2%, 1 cup
Wheat germ, .25 cup
Walnuts, 2 oz
Banana, fresh, 1 medium (mashed or chopped)
Baking Soda, .5 tsp
Baking Powder, 1 tsp
Cinnamon, ground, 1 tsp
Egg white, 2 serving
Salt, .5 tsp
Applesauce, unsweetened, 1 cup
Whole Wheat Flour, 1 cup
Directions
Soak cereal in milk until soggy.
Preheat the oven to 400 degrees F.
Spray muffin pan with nonstick cooking spray.
Combine the cereal with the applesauce, banana and egg whites, and mix until combined.
In seperate bowl, whisk together dry ingredients, including walnuts.
Add wet ingredients to dry and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 25 minutes or until done.
