I was introduced to this recipe by a supervisor when we had one of our holiday meals. I loved it and would always ask her to make it for me. Ingredients

    Turnip Greens

    2 bunches turnip greens
    Smoked Turkey Wings
    1 tsp sugar
    1 tsp. crushed red pepper

    Dumplings -------------------------

    1 cup Buttermilk Corn Meal Mix
    1/2 tsp. salt
    1 large egg
    2/3 liquid from cooked turnip greens

Directions

Pick and wash turnip greens in cold water with 1/4 cup of salt added (Salt help with the cleaning of the greens). Wash until water is clear of grit and sand. Ina large pot, put 2 1/2 quarts of water (You be the judge on the water by the bunches of greens you have - these days I think the bunches are getting smaller. I boil the smoked turkey about 1/2 hour. Add greens and other ingredients. Cover and simmer for 2 hours (more or less depending on the size of your bunches).


Dumplings Mixture -------------------------

Mix all ingredients together. I used a small cookie scoop to roll the batter into the perfect ball about 1-inch in size then drop into boiling turnip liquid. Make sure each dumpling is completely covered in liquid by shaking the pot gently; do not stir. Boil for about 10 minutes.

    I have never heard of cornbread dumplings, but i decided to try with my greens and they turned out great. I was able to make the dumplings per recipe. - 5/2/11

    Used Turkey tails. Problems arose with the dumplings. No way could 1 cup of mix be "rolled" into a ball. I added at least an extra 1/2 cup and could have used more. Next time I will use more mix and just "plop" them into the broth like I do for Chicken & dumplings. Taste was good. Needed salt. - 12/30/10
