Introduction
This is a basic Waldorf or Wacky cake recipe that I inherited from my mom. The kids really like it. I haven't tried to "healthy it up" yet, that is the next challenge. Ingredients

1 c. water
2/3 c. mayo (light or low fat)
2 tsp vanilla extract
2 c. flour
1 c. & 1 tbsp sugar, divided
1/3 c. cocoa
1 tsp baking soda
1/2 tsp salt
2/3 c. chocolate chips
Directions
Mix all liquid ingredients with a wire whisk until well mixed.
Fold in all dry ingredients except the 1 tbsp of sugar and chocolate chips. Beat mixture until well mixed.
Use cupcake liners or grease cupcake tins with choice of grease (butter, spray, etc.).
Preheat oven to 350 F.
Fill to one half each of the cupcake holes, then sprinkle chocolate chips in each cupcake. Then cover with remaining batter. Sprinkle any remaining chocolate chips on the top of each cupcake, then sprinkle the 1 tbsp of sugar evenly over all of the cupcakes.
Bake for 18 to 25 minutes until a toothpick or knife comes out clean.
Makes 12 regular sized cup cakes or 6 jumbo cupcakes.
Note: You can also make the regular cake in two 8x8 pans or a thin 9x13 cake. Cooking times for the 8x8 pans is between 30 and 35 minutes. Cooking times for the 9x13 pan is 40 to 45 minutes. To make a regular thickness 9x13 pan you can 1 & 1/2 the recipe.
