    1 kg (1000 grams) potato
    olive oil
    2 gloves garlic
    1 green bell pepper
    1 red bell pepper
    1 yellow bell pepper
    1 bunch green onions
    400 grams low fat Quark (Apple Farms), you can also use a mixture of Yogurt and Mayonaise as an alternate option.
    salt and pepper
    fresh herbs (chives, Ital. parsley, etc.)


peel and slice potatoes, peel garlic cloves and dice. brown garlic in frying pan with a small amount of olive oil. In the meantime dice peppers and add to frying pan. Add the sliced potatoes and brown both sides (may have to add a little more oil to avoid sticking, pending type of pan).
Finally remove from heat, add quark, chopped onion, salt, pepper and herbs to taste.

Tip: Cook whole potatoes in boiling water until almost done. Peel when cooled enough to handle, then use in recipe as directed.
