Introduction

Baby spinach leaves
1 egg, 2 egg whites
1 T. chopped green bell pepper
1 T chopped onion
1 slice fat free cheese
Pam Spray

Spray a medium skillet with Pam, and heat it for a couple minutes. Then add about 2 C. spinach leaves on one side of skillet. Saute the leaves until wilted. As the leaves wilt, pour the l egg, and two egg whites into the other half of medium skillet. Add bell pepper and onion to egg, and push done egg toward center of skillet until all egg is done. Lay the cheese on top of the egg. It will begin to melt. Then spread the spinach on top and fold. I salt this after it is cooked, so I don't use too much salt.
