Ingredients

    1 Acorn Squash, peeled and cubed
    5 Potatoes, medium, washed and cubed
    1/4 cup olive oil
    1 tsp salt
    1 tsp rosemary
    1 tsp thyme
    1 tsp roasted garlic

Directions

Heat oven to 400 degrees. Mix herbs with oil and coat cubed veggies. Place in oven for 45-60 min, turning every 10 minutes, until tender.
