Introduction

Number of Servings: 12

Ingredients

    Canned Diced Tomatoes, 4 cup
    Carrots, raw, 2 large, chopped
    Onions, raw, 2 cup, chopped
    Celery, raw, 2 cup, diced
    Salt, 1 dash
    Pepper, white, .25 tsp
    Extra Virgin Olive Oil, 1 tbsp
    Optional Ingredients: 1 lb browned extra lean ground beef, oregano, thyme, sweet basil, dill weed

Directions

Chop celery, carrots and onions and saute in olive oil until onions are clear. Chop as finely as possible.

Add diced tomatoes.

Season with salt and pepper. Use other spices to taste.

Allow to cook one hour to three hours. The longer the sauce cooks, the more the vegetables break down, and the smoother the sauce is.

For a meat sauce, add the optional ground beef and recalculate nutritional values accordingly.

    My house smells incredible right now from making this! I didn't have celery, so I used zucchini instead. I blended everything but the onion in the blender just to get the carrots and zucchini super fine, worked well and the sauce is still thick. Will definitely make this again. - 9/8/09
