This is a very tasty dish. It is good for diets because it has so much flavor and few calories. It is one of my families favorite dishes.
I usually use more fish sauce than the recipe calls for.

Ingredients

    2 Tbs. minced lemongrass, only 6 in. of root stem
    1 Tbs. finely chopped shallot
    2 tsp. fish sauce
    1 tsp. soy sauce
    1 tsp. palm sugar
    1/2 lb. flank steak
    1 green mango, peeled and cut into thin matchsticks
    1 Tbs. chopped cilantro
    1/4 cup asian basil leaves
    10 cherry tomatoes or 1 tomato, cut into wedges
    2 Tbs. fried shallots (optional)
    2 Tbs. whole roasted peanuts

    Dressing:
    1 or 2 cloves of garlic
    2-3 Thai birds eye chilies chopped
    1 Tbs. palm sugar
    3 Tbs. fish sauce
    3 Tbs. fresh lime juice
    1 tsp. rice vinegar
    Mix all the dressing ingredients together in a bowl.

Directions

1. Combine the lemongrass, shallots, fish sauce, soy sauce and sugar in a bowl and stir well. Add the beef and marinade for at least 20 minutes. (I marinade over night)

2. Grill the beef over bbq grill or pan sear in an oiled skillet over high heat until just done. (we use the george forman grill) When done, slice across the grain, into bite size pieces.

3. In a serving bowl, combine the mango with the dressing and toss gently. Add the grilled beef, cilantro, basil and peanut.

4. Toss gently and serve with rice.

5. Garnish with fried shallots and roasted peanuts.
