Introduction

Ingredients

1 lb. boneless chicken breasts
2 cups cooked white rice
1 can cream of mushroom soup (or cream of chicken)
1 can Rotel diced tomatoes
1 can Fried Onion Rings
1 onion chopped
4 tblspoons margarine
1 tsp. Worstecheshire sauce
Salt, pepper, garlic salt
Directions
Cook rice & drain.
Season chicken breasts with salt, pepper, and garlic salt. Brown chicken in large saute pan coated with cooking spray.
When chicken is done, remove from pan and cut into small pieces.
Melt margarine in pan and saute onions until clear.
Stir drained rice, diced tomatoes and cream of chicken or mushroom soup into pan.
Return chicken to the pan. Add worstecheshire sauce. Stir until all ingredients are blended.
Spoon mixture into a casserole dish and top with canned onion rings.
Cover with foil and bake at 400 degrees for 20 minutes. Remove foil and bake another 10 minutes, or until the top browns slightly.
Serve with a salad or green vegetable for a great meal. If you have any leftovers, this casserole easily reheats in the microwave.
