Introduction

Ingredients

    1 can black beans drained and rinsed
    1 avocado cut in small cubes
    1 green onion minced, just the green tops
    1/2 roma tomato, finely chopped
    1/4 green pepper finely chopped
    1 tsp fresh minced garlic
    Juice of one lime or of one lemon
    (if using lemon use a pinch of sugar)
    1/2 tsp cumin seed
    1/2 tsp crushed chilis
    dry parsley
    salt and black pepper to taste

Directions

Mix all ingredients together and chill. Can be used as a dip for chips or wedges of tomato or peppers. Can also be used as a filling for lettuce leaves or soft tortillas.
