Ingredients

    3/4 cup whole wheat pastry flour
    1/4 cup graham flour
    1/4 cup rice flour
    1/4 cup spelt flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/2 cup nonfat, plain yogurt
    1/2 cup unsweetened applesauce
    1 egg white
    1 tbsp. flaxseed meal mixed with 3 tbsp. water
    1 tsp. vanilla
    1 cup fresh blueberries

Directions

Preheat oven to 350 degrees.

Mix the flours, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, combine the yogurt, egg white, applesauce, flaxseed/water mixture, and vanilla.
Add the wet ingredients to the dry and fold together gently. Stir in blueberries.

Bake in a greased loaf pan for about 45 minutes.

    Pretty good. The nutritional information was calculated without several of the ingredients - the graham flour, baking powder, baking soda, salt and vanilla extract. They add 13.2 calories, 218.7 mg of sodium and 2.4 carbs. Makes about 1/2 loaf, maybe 6 slices - not 10 servings. - 4/18/10
