Ingredients

    Ground Turkey 1 lb.
    1 large egg
    celery stalk 7.5"-8"
    2 carrots 5.5"
    squash 5 slices
    3 slices whitewheat bread
    or 1 cup breadcrums/oats
    2 garlic cloves
    onion powder
    salt and pepper
    nutmeg
    1 Tbs. ketchup or BBQ sauce
    1 Tbs. lite soy sauce
    1 Tbs. oyster sauce or
    worcestershire or hoisin sauce

Directions

Puree veggies
mix all ingrediants together in bowl
scoop into cupcake or muffin pan
Make 12 equal size mini-meatloaves

bake at 350 degrees for 30 minutes

    This is a great way to sneak vegetables into your meals. I am going to make this today using red, green, orange bell peppers, carrots, celery, cauliflower since I have no squash on hand. Wish I did. I will come back and comment on it again after I have made it. - 6/21/09
