Introduction

Great for leftover turkey. I add the turkey carcus (fat & skin removed) to a pot with enough water to cover it and cook for a few hours on low, the meat falls off, I strain out the bones and have my broth. This is very filling and is great with a side salad. Sometimes I add chopped sweet potatoes or brown rice. Great for leftover turkey. Ingredients

    1 small onion (chopped)
    6 cloves of garlic (minced)
    3 green chile's or canned
    1 Tbl of olive oil
    2 cups chicken or turkey broth
    1 can black beans, rinced
    1 can of corn (reduced sodium)
    1 zuccini (green) chopped
    1 can of diced tomatoes
    2 cups of cooked chopped turkey
    1 tsp ground cumin
    Salt & Pepper to taste

Directions

Makes 6 (1 cup) servings

Saute the onion, add the garlic and the chile in a large pot. Add the remaining ingredients and bring to a boil, reduce heat and simmer for 30-45 minutes, until zuccini is soft.
