Introduction

Whipped these up when trying to put together a portable snack with whatever was in the fridge. Whipped these up when trying to put together a portable snack with whatever was in the fridge.
Number of Servings: 16

Ingredients

    150g bacon
    1/4 onion
    130g cheddar
    6 eggs
    3T cream

Directions

Dice bacon and onion, and saute in a little butter until onion is translucent. Transfer to small mixing bowl.


Dice cheddar and add to bacon and onion.


Lightly grease a mini muffin tray, then fill with diced mixture. Do not pack firmly into holes.


Whip eggs and cream until well combined, then gradually pour over diced mixture until each hole is 3/4 full.


Bake in 200 degree C oven for 10-15 minutes. The cheddar cheese may melt and boil over, so the frittatas won't necessarily be perfectly muffin-shaped. They'll be tasty though!
