Ingredients

1 Box Manicotti Noodles
1 LB Italian Sausage
1 Sm. Onion
2 Cloves diced Garlic
2 TBSP Basil
1 (16 0z) Tub Fat Free Ricotta Cheese
2 C. Fat Free Mozarella (or part skim)
1 C. Provel or Provolone Cheese
1 Jar Garden Veggie Ragu
1 sm can black olives
1 can tomato paste
Directions
Makes 14 servings (serving size is 1 stuffed noodle).
Heat oven to 450.
In a stockpot, boil water for the noodles. While the water is boiling, brown the sausage in a skillet. Drain. Add diced onion, garlic, basil, salt and pepper to taste and olives. Add tomato paste and water if needed. Simmer about 15 minutes
When noodles are cooked (just a little al dente) drain and then place them on a sheet of aluminum foil.
In a seperate bowl, mix all cheeses except ONE cup of Mozarella. Add egg. Mix until well blended. Add sausage mixture to the cheese and mix again.
Pour half of Ragu in bottom of a 9X13 pan. Hand stuff noodles with the cheese mixture and place in the pan. Cover with remaining Ragu. Cover with foil and bake about 30-35 minutes. Remove foil and top with remaining 1 cup mozarella cheese. Bake 5 more minutes or until cheese is melted.
Serve hot. Enjoy
