Introduction
I created this easy and healthier version of the old favorite tonight because I had some leftover cooked turkey breast. You could substitute chicken breast and reduced-fat crescent rolls (or use 1 roll instead of 2 per serving) to make it even healthier. Two rolls is a great ratio if you're dividing the "filling" in to 4 servings - it is hearty you don't want a side dish, so you may not finish it! Ingredients

1 c. Carrots, chopped
1 c. celery, chopped (about 3 ribs)
1 large onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 c. frozen peas
12 oz. cooked turkey or chicken, cubed (about 2 cups)
1 tsp ground thyme
1 tbsp salt (leave out if you want)
1 tbsp ground black pepper
1 can (10 3/4 oz) Campbell's "Healthy Request" Cream of Chicken condensed soup
1/2 c. nonfat milk
1 package Pillsbury Crescent rolls (8 rolls)
Directions
Makes 4 large servings (w/ 2 rolls per serving)
Sautee fresh vegetables in the olive oil until soft. Stir in seasonings as they cook.
Add frozen peas, turkey (or chicken), soup and milk and allow to cook covered until rolls are ready.
Unroll crescent roll dough, separating, and create 'cups' in a muffin pan (or just bake flat on a cookie sheet). Bake for 10 minutes at 375 degrees.
Place 2 crescent cups in a large bowl and spoon 1/4 of the 'filling' over top. Serve it up hot!
