Introduction

Use vegetables of choice, about 3 - 4 cups Use vegetables of choice, about 3 - 4 cups
Number of Servings: 8

Ingredients

    1 cup evaporated skim milk
    1 cup fresh eggs
    8 slices crisp bacon
    1/2 cup chopped green onions
    1 cup chopped tomatoes
    1 can mushrooms, drained and rinsed
    1 can whole kernel corn
    1 cup shredded mozzarella cheese
    salt & peper to taste

Directions

1. Preheat oven to 350 F.
2. Beat eggs with milk, pepper, & salt, add other ingredients and mix.
3. Pour into greased pieplate.
Bake for 45 - 50 minutes or until done.
Makes 8 servings

    This was very good ! Left out the mushrooms and added zucchini. Also used egg beaters. Thanks for sharing. - 6/7/09
