Introduction

This sauce is great with whole wheat penne, spaghetti, fettucini, or whatever pasta you crave. It is simple, low sodium, low fat and less than 100 calories per 1/2 cup serving! Ingredients

    1 lb ground turkey (98% lean)
    1 large onion, chopped
    3 cloves garlic, minced
    3 stalkes celery, minced
    1 red pepper, oven roasted, chopped
    fresh oregano
    fresh basil
    fresh thyme
    fresh parsley, all to taste
    2 large (28 oz) cans diced tomato, no salt added
    pepper, or mrs dash, italian seasoning to taste

Directions

In a stock pot, heat 2 tbsp olive oil and brown ground turkey. In the meantime, cut pepper in half and seed. place cut side down in a foil pouch and drizzle with remaining olive oil. place in broiler (500 deg) just until skin begins to blacken. Chop onion, celery and garlic, and mix with turkey until translucsent. Remove pepper from oven and place in a zip top bag for about 5 min to sweat. the skin will come right off, then chop. Add pepper to turkey mixture. Add canned tomatoes and simmer. about 1/2 way through the simmer, add fresh herbs and season to taste. Let simmer until thickened. If needed add a small amount of unsalted tomato paste to thicken to taste! Yield = 9 cups, serving size 1/2 cup
