Introduction

This is a great cold summer salad. It's very refreshing. With protein, carbohydrates and vegetables included, it's great as an all in one meal. This is a great cold summer salad. It's very refreshing. With protein, carbohydrates and vegetables included, it's great as an all in one meal.

Ingredients

    16 oz cheese filled tortellini
    1 green pepper, thinly sliced
    1 red pepper julienned or thinly sliced
    1 small red onion, julienned or thinly sliced
    1/2 cup crumbled feta cheese
    1 boneless chicken breast, sliced into small strips
    1/4 cup olive oil
    2 tsp lemon zest
    2 Tblspn ground almonds
    1 Tblspn honey

Directions

Cook pasta until al dente, about 4 minutes. Drain and run under cold water. Refrigerate until chilled.

In non-stick pan, cook chicken. Set aside to cool.

Cut up peppers and onions.

Prepare dressing of olive oil, lemon zest, almonds and honey in a bowl and set aside.

Mix in large bowl cooled pasta and chicken. Add peppers and onions. Add cheese and dressing to toss.

Served chilled.
