Ingredients

    20 oz Ground Turkey Breast Shady Brook Farm
    99% Fat Free
    1 15.5 oz Can Black Beans
    1 14.5 oz Can Del Monte Diced Tomatoes
    (No Salt Added)

Directions

Put alittle olive oil in a skillet. Cook ground turkey until no longer pink, add diced tomatoes, and black beans until cooked through. Let cook for abit for the flavors to blends together.

1/2 Cup Servings.. Top with Scallions.
Sour Cream Optional
I serve this two ways. 1st we serve this in a small tortia wrap. 1/4 cup fits perfect in a small wrap. Or put this in a bowl and have 1-2 oz of Tostado Scoops. Yes I actually measure them out. This reheats great, freezes great and is a quick fix.

    I ate it with brown rice and it was great. Instead of diced tomatoes, I used a can of diced tomatoes and green chilies. I also put a little bit of garlic salt. - 8/26/09

    I added about 1/4 c prego tomato sauce and some chili powder, garlic powdered and 1/2 chopped red pepper and 1 chopped large onion. It was very filling - 11/7/09

    Everyone loved this! I did tweak it a little - add about 1/3 of a package of taco seasoning and used fire roasted diced tomatos with garlic. A tad too juicy, but still delicious. - 7/29/09

    Cilantro added a wonderful flavor. Added 1/4 tsp. cumin (ground) and it was delicious. Used greek yogurt (plain) as a topper vs. sour cream. - 4/26/21
