Introduction

Ingredients

3 boneless, skinless chicken breast
1 cup of salsa
1 can of seasoned black beans
1 can of cream of mushroom soup
1 can of diced tomato with jalapeno peppers
Directions
Place chicken breast into slow cooker. Drain the beans and tomatoes. Cover chicken with salsa, beans, soup, and tomatoes. Cover and cook on high for about 3 hours. (Time will vary depending upon size of the slow cooker.)
Once chicken is cooked, shred chicken. (I just use two forks and pull the chicken apart.) Can be poured over rice, served alone, or as I like it, served with a small amount of mozzarella cheese and tortilla chips.
You can use less soup if you want it to be thicker, or use fat free cream of mushroom soup. (I didn't have it on hand.)

This was pretty good. I made it exactly as the recipe states. It wasn't creamy enough for me. I would have taken out the salsa and added a second can of soup, maybe a cream of chicken. One bonus is that it was better the next day, so the second day it would get 4 stars! I served it over rice. - 8/12/09
