Introduction

Ingredients

    5 cups cooked wild rice (cooked in low sodium chicken broth, or homemade broth if you have it)

    1 tablespoon kosher salt

    1 cup toasted pine nuts

    1 cup craisins

    10 tablespoons extra virgin olive oil

    5 tablespoons seasoned rice vinegar (available in the vinegar section of most grocery stores)

Directions

Makes 12 - 1/2 cup servings. Refrigerate any leftovers.

Combine all ingredients in a large bowl. Stir gently so as not to mash the rice. Serve warm, room temperature or cold.
