Introduction

Perfectly light, fluffy and yummy. Really good with mesclun and perhaps french bread. You can change the spinach for whatever cooked veggie you want, or raw cherry tomatoes. Ingredients

    2 eggs, separated
    1 tbsp light sour cream
    pinch herbes de provence
    2 wedges light laughin cow cheese
    1/3 cup cooked spinach
    pinch ground mace

Directions

Beat up the spinach with the cheese, season with salt, pepper, mace.

In a separate bowl, beat the egg yolk with the sour cream, season with pepper.

Beat up the egg white with some salt until soft peaks form.
Preheat a nonstick pan over medium high heat. Spray it with cooking spray.
Fold really gently the egg yolks into the egg whites.
Put the egg mixture in the pan, and add the spinach mixture in the middle of the omelet.
Cook for about 2 minutes, then fold. Make sure its hot in the middle, without overcooking the omelet.
