Ingredients

Salmon Patties
1 6 oz. can Pink Salmon
1 slice med. onion, chopped fine
6 2" whole wheat crackers, crushed
1/3 cup Egg Beaters
1 tsp dried dill(more if you like dill)
3 tsp Olive oil
Salt and pepper to taste.
Dill Sauce
2 tbls low fat sour cream
2 tbls nonfat plain yogurt
1/2 tsp lemon juice
1 tbl dried dill
Directions
Salmon Patties
Makes four patties
Mix all ingredients well. Heat olive oil in skillet on med/high. Spoon 4 equal amounts into skillet and flatten with spatula. Cook for 6 to 7 minutes(or until nice crust is formed) on each side and center is done. Serve on bed of baby spinach with a dollop of dill sauce, and sliced apple(or fruit of your choice).
Dill Sauce
Combine all ingredients in a bowl and stir until mixed. You can put this in the fridge while patties are cooking.
