Introduction

Number of Servings: 6

Ingredients

    * 1 cup Basmati Rice (can use any rice)
    * 2 cups water
    * 2 oz. lime juice
    * 1 tbsp Country Crock Light (if you use any other butter/margarine/substitute, this will change info)
    * 1 tbsp fresh cilantro (if using dried, cut it in half)

Directions

Boil water, Country Crock and Lime Juice.

Add rice

As rice is close to done, add in fresh cilantro (or dried).

DONE!

* Remember the 2:1 rule with rice; If you want to cut this in half using 1 c. water, you only need 1/5 (.5) cup rice.

Makes ~ 6 - .5 cup servings the way I prepped, but depends sometimes on style of rice.

    Very Good
    This was quite delicious. Very light but full of flavor. I used long grain brown rice and left out the margarine and I thought it was missing just a hint of something. Next time I will add the margarine. - 3/3/10
