Introduction

I love Eggplant Parm but it is so heavy! This is a lighter, guilt-free version you'll love!! I love Eggplant Parm but it is so heavy! This is a lighter, guilt-free version you'll love!!
Number of Servings: 3

Ingredients

    Egg Plant
    2 Egg Whites
    1 Cup of FF Shredded Mozzarella
    Pinch of diced Garlic
    Can of Diced tomatoes

Directions

1. Cut the eggplant (round, not long) in half inch slices.

2. Mix Cheese and Garlic in with the Egg Whites.

3. Take an Eggplant slice and cut a pocket into it, almost all the way through.

3. Stuff cheese Mixture into Eggplant pocket.

4. Spray pan and let eggplant cook for about 2 minutes on both sides.

5. Put cooked Eggplant in baking dish, cover with diced tomatoes, and in oven on 300 for 10-15 minutes.

6. Sprinkle with Parmesan Cheese if desired.

    Great idea! I thought it could have used a little something more, maybe fresh basil? And mine really need to cook for about 10-15 minutes longer. But made a great side dish! - 7/22/09
