Introduction

Ingredients

4 cups zucchini squash
4 cups yellow summer squash
3 Tablespoons Smart Balance buttery spread
3/4 Cup chopped onion
1/2 cup Egg Beaters
2 Tablespoons minced fresh parsley
1 cup shredded reduced fat cheese
1 teaspoon salt
1/2 teaspoon white pepper
2 cups diced low fat ham
2 slices whole wheat bread processed into crumbs
Directions
Preheat oven to 350 degrees.
Spray a 9X13 inch baking pan with buttery spray.
Break up bread and grind it in a food processor until it is crumbs.
Cube squash and place squash and onions in large pot with a small amount of water. Bring to a simmer and cook until tender, 8-10 minutes, then drain in collander. Place squash in a large bowl and mash with a potato masher. Add buttery spread and stir until melted, then stir in the ham.
In a separate bowl combine the egg beaters, parsley, cheese and salt and pepper. Mix well and add to the squash and ham mixture.
Pour into the baking dish and bake for 20 minutes. Top with fresh bread crumbs and bake an additional 10 minutes, or until it is browned.
