Number of Servings: 12

Ingredients

18 (1 ounce) slices white bread, cubed
    8 ounces cooked ham, cubed
    2 cups shredded Cheddar cheese
1 1/2 cups diced Swiss cheese
    6 eggs
    3 1/2 cups milk
    1/2 teaspoon onion powder
    2 cups crushed cornflakes cereal
    1/2 cup butter, melted

Directions

DIRECTIONS

1. Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.

2. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.

3. Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.

Not my recipe. Just seemed like a good, easy way to get myself to eat breakfast in the morning. Original recipe here: http://allrecipes.com/Recipe/Ham-and-Cheese-Breakfast-Casserole/Detail.aspx

I made it without the onion powder, swiss cheese, etc. You can make it however you want, be it adding green peppers, onion, etc. I'm sure it can be modified to be healthier, like using EggBeaters instead of real eggs, skim milk. I am going to make this again, but without the bread layers and corn flakes. I thought (and friends and family too) that it was good, but that the bread on the top layer got soggy and the corn flakes really didn't add anything to the overall taste.
