Ingredients

    1 large egg
    1/2 cup liquid egg whites
    1/3 cup fat free ricotta cheese
    1 1/2 tsp canola oil
    1/2 cup frozen chopped spinach
    salt and pepper to taste

Directions

Whisk together egg, egg whites and ricotta cheese.
Coat a medium frying pan with canola oil. Saute spinach on medium-high head about 2-3 minutes.
Add egg mixture to pan. As eggs begin to set, lift the edges with a spatula so uncooked eggs seep out and cook.
when fully cooked, remove from pan, fold in half and add salt and pepper if desired.
