Ingredients

1 Box Manicotti Shells (12 shells)
8 oz. Fat Free Ricotta cheese
3 T. Parmesan cheese
2/3 C. 2% Mozzarella, shredded finely
1 10 oz boxes frozen spinach, thawed and drained.
1 lb. Chicken Breast, cooked and diced
1/4 cup chopped onion
4 12 oz. Cans Cento Tomato Sauce
1 8 oz boneless chicken breast- cooked & chopped
1 Tbsp Italian seasoning
Pam Olive OIl
Directions
Saute onions in a quick shot of Pam Olive Oil spray.
Combine onions, diced chicken, ricotta cheese, parm cheese and 1/2 C. of Mozzarella cheese and italian seasoning. Mix until blended well
Stuff uncooked manicotti shells with mixture and place in baking dish. Cover with 4 cans of tomato sauce (If I have to use canned, I used Cento).
Cook at 375 for 1 hour, or until pasta is tender. Top dish with remaining 1/4 C. of mozzarella.
