Introduction

Low cal and very healthy and YUMMY! Low cal and very healthy and YUMMY!
Number of Servings: 12

Ingredients

    1 cup flour
    1c oats(old fashioned)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup sugar free applesauce
    2 egg whites
    1/2 cup brown sugar
    1/2 cup water
    1c blueberries, frozen

Directions

Mix dry ingredients together, than add wet ingredients except for blueberries. Mix well, than add blueberries. Bake at 350 for 20-25 minutes or until tops are golden brown. It is a little hard to tell since they have wheat flour in them but you will notice a little difference. Makes 12 muffins

    I changed the recipe a little bit. I used fresh blueberries, 1/2 C whole wheat flour, 1/2 C All Purpose flour, 1/4 C brown sugar with 1/4 C Splenda. My family loves the muffins. Next time, I'll add more applesauce and sugar, cut back on oatmeal, since I like to add more moisture and sweetness.=) - 5/20/10

    These muffins are pretty tasty! I added some sliced almonds and they were delicious. They are chewy and filling and an excellent pairing with a cup of coffee. I had them for a snack and I will enjoy them again for breakfast. - 7/14/09

    I've made these twice - the second time I used steel cut oats for a more nutty flavor. Excellent & such a great treat when I want something sweet and healthy. - 9/27/09

    Tonight I tried the fresh blueberries and added 2 scoops of vanilla isopure protein so that I was able to eat while also getting more protein. They were great! - 9/12/09

    My husband votes 4 stars but I say 5 since it has both awesome flavor AND healthy ingredients. Will definitely make these again! Only thing I changed was that I used fresh berries instead. Hearty and filling. Thanks for sharing! - 7/31/09
