Introduction

I came up with this playing around with leftovers from the Sparkpeople recipe "Curried Red Lentils with Brown Rice". What a great and easy dinner! I came up with this playing around with leftovers from the Sparkpeople recipe "Curried Red Lentils with Brown Rice". What a great and easy dinner!

Ingredients

    2.5 oz Shady Brook Farms Breakfast Sausage
    1/2 cup sliced green onions
    1 cup fresh spinach, chopped
    1 serving leftover A-L's Modified Curried Red Lentils with Brown Rice (I used regular lentils as I couldn't find red...) about 1 cup
    1/4 tsp cayenne pepper (optional)
    2 eggs

Directions

Before starting, chop spinach and slice green onions. Have ingredients ready and waiting--this cooks up fast!
Heat skillet over medium heat. Brown sausage. Add green onions and spinach until slightly cooked, then add lentils & brown rice, and cayenne. Allow to heat through for a couple of minutes, then break two eggs over mixture. Break yolks, mix together gently and wait until egg is thoroughly cooked. Enjoy!
